Included Recipe – Swedish Almond Cake
Ingredients:

1 1/4 cups sugar

1 egg

1 teaspoon vanilla extract

1 1/2 teaspoons pure almond extract

2/3 cup milk

1 1/4 cups all-purpose flour

1/2 teaspoon baking powder

1 stick (1/2 cup) melted butter

Directions:

Preheat oven to 350°F (175°C). Spray almond cake pan lightly with cooking spray.

In a mixing bowl, beat together sugar, egg, almond extract, vanilla extract, and milk until smooth.

Add flour and baking powder; mix until combined.

Stir in melted butter until batter is uniform.

Pour batter into prepared pan and bake for 40–50 minutes, until edges are golden brown and a toothpick inserted into the center comes out clean.

Cool cake in the pan completely before removing — the cake is delicate and may break if unmolded too soon.

Finish with a dusting of confectioners’ sugar, or top with icing and sliced almonds, if desired.
